Ginger scallion meatballs from WSJ


Found this in the WSJ. Sounds delish, but I think I’ll make this with jasmine rice.

Ingredients
  • 2 cups farro
  • 4 cups water
  • 2 teaspoons kosher salt, plus more for seasoning boiling water
  • 1 large egg, beaten
  • ⅓ cup breadcrumbs 
  • ¼ teaspoon red pepper flakes
  • ¼ cup plus finely chopped scallions
  • ¼ cup finely chopped cilantro
  • 2-inch piece ginger, peeled and finely chopped
  • ½ teaspoon ground cumin
  • 1 pound ground pork
  • 2½ tablespoons extra-virgin olive oil, plus more for serving
  • 2 teaspoons freshly squeezed lemon or lime juice
  • Freshly ground black pepper
  • Yogurt, lime wedges and cilantro leaves with tender stems, for serving

Directions

  1. In a quart container or medium bowl, combine farro and water. Cover and let farro soak at least 4 hours. (If your kitchen is exceptionally warm, soak in the refrigerator for 8 hours instead.) 
  2. Preheat oven to 425 degrees. Bring a large pot of salted water to a boil over medium-high heat. Drain farro and add to boiling water. Cook farro until it is tender but retains a slight bite, 12-15 minutes. Drain farro again and rinse with cold water. 
  3. Meanwhile, in a large bowl, combine 2 teaspoons salt, egg, breadcrumbs, red pepper flakes, scallions, cilantro, ginger, cumin, pork and 1½ tablespoons olive oil. Use a wooden spoon or your hands to mix ingredients until well combined and evenly distributed.
  4. Roll pork mixture into 1½-inch balls (roughly ping-pong-ball-size) and place on a baking sheet, spaced evenly apart. Bake until meatballs brown on the bottom and cook  through, about 10 minutes.
  5. Add lemon juice and remaining oil to drained farro. Season with salt and pepper. Serve with yoghurt, lime wedge, and cilantro.
