Have you wondered what to do with artichokes, or even how to prepare or eat artichokes?  Below I’ve shared my tips for cutting/prepping, cooking, and eating this favorite veggie! Artichokes are just as pretty as they are fun to eat. From the “thistle” category, artichokes can be steamed, stuffed or fried. How to Buy It’s pretty easy to select fresh, whole artichokes for cooking! Look for long stems, dark green leaves that are tightly packed around the globe. Make sure there are no blemishes or soft spots on the outside. Some of the leaves can be a bit purple, this is ok. To Prepare Trim off the stem close to the base so the artichokes stand upright during cooking. Cut off the top of the artichoke, about 1″ or so. Green beans are pan-fried crisp with garlic and a simple sauce.  Why order out when you can make these deliciously crunchy, spicy Szechuan Green Beans in about 15 minutes at home! Spicy Szechuan Green Beans We love these Szechuan Green Beans because they’re the perfect complement to a fun take-out-inspired meal! Eat them hot or cold, over a plate of rice or in a stir fry cooked with tofu, chicken , or ground pork or beef. Ingredients and Variations GREEN BEANS Fresh from the garden or the local market is my first choice. Frozen will work in this recipe too. SEASONINGS Here, we briefly sauté the green beans in oil, garlic, and ginger. Toss in a little soy sauce, garlic chili paste, and a splash of sesame oil before serving. VARIATIONS Too spicy?
